Between June and September, you will see the smallest amount of rainfall and water temperatures reach 27ºC meaning the water is perfect for water sports. The winter months of Ibiza are November to April and even then it is still fairly mild; especially compared to the UK. Your average temperature in the day will be 15ºC although this can rise when the sun shines. There is rain in the winter months and it is best to pack a jacket if you do choose to go at this time as it can be fairly cold in the evenings.
